First of all let's talk about the definition of Chemistry. Chemistry can
be defined as a branch of science that deals with matter (anything
that has mass and occupies space), the properties of matter and how
it changes or how it reacts. In a more simpler way you could say
Chemistry is what this are actually made of and how they change.
Examples of what we see as chemistry are in our day to day lives e.g when
you remove the ice you put in the fridge and let it dissolve into water, that
itself is chemistry.
Now we go to food, What is food? Food is any substance that we eat
or drink that provides nutrients and gives the body energy growth and
repair in other words Food is whatever we consume to stay alive and
healthy
So when these two are combined we could say that Chemistry of Food
or Food Chemistry is studying what food is studying what food is
made of (nutrients) and how it changes in cooking and even when
inside the body, another words Food chemistry is the study of the
chemical substances in food and how they react during Cooking,
Storage and Digestion.

1. Carbohydrates
Carbohydrates is where energy is mainly gotten from. Made of
Carbon, Hydrogen and Oxygen. It's in three forms: the
monosaccharides e.g glucose, disaccharide e.g sucrose and the
one we are common with trisaccharide e.g starch. Functions of
Carbohydrates in the body, apart from the fact that it gives energy
what else does it do, It's also stored as glycogen in the body. General
examples of Carbohydrates are our rice and bread
2. Protein
Protein is made up of amino acids which is needed for growth and
