Task 2: The local hotel in your area is holding an international week. As the trainee chef you
have been invited to take part and have been asked to prepare a two-course meal from a country
of your choice.
,Introduction
I have been assigned to create a two-meal course from a country I have chosen for an international
week. I believe this task is going to be quite challenging however, I’m willing to put all my dedication
towards this assignment to ensure that this task comes out spectacular.
To complete this task, I will have to research all types of international cuisines then, I would have to
choose which country I would like to represent. A way that would help me decide what country I would
like to choose is by doing a questionnaire, I would ask the public what types of cultural food would they
prefer.
Apart from my research is to compare the taste of two takeaway shops but it’ll be the same dish I would
taste. When choosing my dish after doing my survey, I have to ensure that the ingredients are easy to
purchase, which is why I have to do another survey, for example, a question I would ask is ‘what
common international dish would you prefer?’ and from the results, I would have a rough idea what the
public likes the most. When I eventually choose a country I would have to deeply investigate the reason
why they eat that dish the various flavors, ingredients, and vibrant colors used in distinct dishes. Each
country has its cooking/cuisine and each cuisine is an art in itself. My favorite cuisines are Italian,
Caribbean, Portuguese, Indian, Southern, Thai, Vietnamese, Chinese, French, etc. Most countries have a
well-known or famous dish or ingredient that is associated with their cuisine. But whatever cooking you
try; it is always enjoyable to savour dishes from so many different countries.
Background Information
International Cuisine is dishes that come from countries that are from all around the world.
Many countries have their sense of style and spice in their cultural food. The main influences on the
cuisine of a particular country will be the wealth of the country, whether they have good transport and
hygienic storage capabilities. The less developed a country is, then the more the people there have to
rely on locally grown produce and grow their foodstuffs. For example, those who aren’t financially stable
they have to eat their crops rather than buying things and food getting shipped to them. Another reason
is the weather conditions in their country. For example, in the Caribbean those who live there can grow
sugarcane because of the maintenance of the weather there, so therefore because the weather in
Britain is not consistent as one day it’ll be hot and the other, it's pouring day with rain. Television and
social media. The customer demands more international foods as the UK is becoming more multicultural
every year. For example, in my local supermarket, there is an aisle for world foods that contain food
from around the world. As time goes on more seasonings are put on shelves as well as chocolate and
crisps from around the world.
The impact international food has taken is a positive one as there is a Lithuanian Supermarket in my
area and if you shop in there you’re able to experience what Lithuanian food tastes like. The quality of
, certain foods isn’t up to standard as it would have been in the country it’s originated from. For example,
I have bought jerk chicken previously and it tasted like BBQ chicken instead. I believe the reason for this
is either because the supermarket they went to, to buy the seasoning they must have only sold low
quality of that item.
Chosen country
The country I have chosen is Jamaica. Jamaica is a Caribbean island nation, that has a lush topography of
mountains, rainforests, and reef-lined beaches. Jamaica is famed as the birthplace of reggae music, and
its capital Kingston is home to the Bob Marley Museum, dedicated to the famous singer.
The reason being is because their food is very colourful and they have different varieties of flavours.
Also, to complete most dishes you have to perform high skilled techniques; one technique is marinating
the meat overnight so that the flavours of the seasoning can stand out more. The best way to marinate
chicken is to pierce the chicken with a fork, or cutting it into smaller pieces will help it absorb the
marinade. In general, two hours of marinating is long enough for the meat to soak up the flavour, which
is what I’m aiming for so that I can get a high grade. Another reason why I have chosen Jamaica is that
that’s where I’m from and I have been raised as a Jamaican although I am only half. Another reason as to
why I have chosen this country is because I would be learning new recipes and skills and that would be
very useful to use when I eventually have a child and a partner. I would be able to cook for both of them
and show off the skills I have learned during this task. Because I am from Jamaica I have a full
understanding of what they eat on a daily. My diet daily consists of foods from Jamaica. Most Jamaican
dishes have a lot of carbohydrates on one plate. For example, if you go to a Jamaican restaurant you
could order stew chicken with hard food. Hard food is food that grows in Jamaica and we cook it and eat
it. Hard food consists of any starchy agricultural product used as food. Examples include, but are not
limited to, yams, potatoes, green bananas, cassava, pumpkins, breadfruit and many more.
Many countries have influenced our meals
The Latinos used a wide array of fish, crab, wild birds, cassava, bammy, cornmeal porridge, roasted and
boiled corn. These still form a part of our main fare today. The Spaniard's influence includes
escovietched fish, coconut gizzada and the method of soaking fruits in rum/wine for Christmas pudding.
The British brought us Easter bun, a wide array of pastries and corn/salted beef. The African slaves
prepared dishes in Jamaica such as dip and fall back (cod fish fritters), jerk and a drink called "wash",
made from wet sugar and water. The Germans brought us baked ham, frankfurter and sausage. The
Chinese brought us soy sauce, deep-frying, stir frying and sweet and sour dishes. The East Indians
brought wheat flour, eggplant, roti and curry. And the Jews introduced us to exotic ways of preparing
