, What is turnover?
• Each time a position is vacated either
voluntarily or involuntarily, a new employee
has to hired and trained – this replacement
cycle is known as turnover
• Turnover has been a problem at the start of
the flourishment of the hospitality industry
and remains a problem to date
– Management to this day find reasons to justify
this: seasonal work, young employees moving on
to other careers, competition from new operations
, How did the industry come to
high turnover rates?
• Turnover is higher now that it was a
decade ago and the change is due to the
diminishing supply of available workers
• 2 things happened:
1. Baby boomers – many of whom who were hourly
employees grew up – now guests and children
2. There was a failure to address the ‘temporary
employee issue’ – was created by common
employee view that they were just passing
through on their way to ‘real jobs’
