Micro-organismen komen voor in water, lucht, grond, in het darmkanaal, kortom overal behalve in
gezonde levende weefsels.

Belangrijkste milieufactoren behoren

- Beschikbare vochtgehalte
- Beschikbare voedingsstoffen
- Zuurtegraad
- Temperatuur
- De aanwezigheid van groeiremmende stoffen
- De aan/afwezigheid van zuurstof (aeroob/anaeroob)

Ziekteverwekkende micro-organismen kunnen levend door voedinsmiddelen binnen krijgen dit
noemt met voedselinfectie.
Als een micro-organismen toxinen aanmaakt tijdens zijn groei kan men besmet raken door
voedselvergiftiging.

IN de productie van levensmiddelen kan ook op veel manieren besmetting optreden, bijvoorbeeld
door.

- Grondstoffen, hulpstoffen
- Apparatuur, spoelwater
- Mensen; handen, haar, kleren, feces, etc
- Lucht (stof)
- Insecten, knaagdieren

Bij levensmiddelenindustrie is de besmettingskans erg groot. Dit kan door de transport en opslag van
grondstoffen. Of bij de bewerking of verwerking van die grondstoffen.

Voorbeelden van besmetting bij bewerking van grondstoffen zijn;

- Slachten van dieren kan de darminhoud besmetting geven
- Breken van eieren de schaal
- Besmetting door wassen met vervuild waswater
- Toevoegen van besmette ingrediënten.

De hoeveelheid micro-organismen hangt af van het milieu of er veel of weinig voedingsstoffen zijn.

De belangrijkste zijn onderstreept de andere spelen ook een belangrijke rol maar iets minder
belangrijk dan schimmels, gisten en bacterien.

Bederf kan gezien worden onder “besmetting met micro-organismen “ of “groei van micro-
organismen”
