Rhubarb is a vegetable that is rarely known in Indonesia. Even so, the shape is similar to
vegetables that are widely cultivated in Indonesia. The stems are reddish like cassava leaf
stalks. The difference is that the stalks of rhubarb are slightly thicker. While the leaves are
similar to lettuce.

Usually, the part of the vegetable that can be consumed is the leaves. However, rhubarb
leaves are forbidden to eat because they contain high levels of poison and oxalic acid. Only
the stem of the plant is safe to eat.

Less Known Health Benefits of Rhubarb

Rhubarb stalks are the best source of vitamin K and vitamin A. This vegetable is also
equipped with antioxidants and various important minerals that provide the following health
benefits:

1. Maintain bone health

Rhubarb's vitamin K content maintains bone density and strength. Maintaining bone density
can prevent bone loss or osteoporosis.

2. Lower cholesterol

Studies show that this vegetable can reduce levels of bad cholesterol and total cholesterol in
the blood. Reducing cholesterol levels can minimize the risk of heart disease. This effect is
obtained from the antioxidants in rhubarb.

3. Smooth digestion

The fiber content in these vegetables can facilitate the digestive tract so that constipation
problems can be prevented. Rhubarb also contains sennosides which act as natural
laxatives. Meanwhile, the tannin content is able to provide anti-diarrhea effects.

4. Prevent cancer

The antioxidants in rhubarb help fight free radicals in the body. Free radicals can cause
oxidative stress if there are too many of them. As a result, healthy cells are susceptible to
