Developing Job Descriptions for Red Lobster
Introduction
The Red Lobster is a restaurant chain that operates over 670 casual-dining seafood restaurants in
the US and Canada. They have developed a new business strategy to focus on simplifying their
menus and providing the highest-quality seafood at mid-range prices. They want to build a new
image as a crisp, clean and affordable place that customers will enjoy. To that end, they want to
hire a restaurant manager that embodies these values. As a consultant, our job is to develop an
overall strategy that includes a thorough job description containing a job title, purpose statement,
detailed roles, and duties.
Overall Strategy
Restaurant Managers have a responsibility to make sure the restaurant runs efficiently and

experience while dining. Consequently, they will interact with customers, service-level staff, and
restaurant management (Giannotti, 2021). They make sure the restaurant is operating in a manner
that is profitable and aligned with the restaurant's vision, mission, and goals.
Restaurant managers need to be able to serve customers, manage human resources,
knowledgeable in supply chain & procurement, and be able to maintain the health and safety of
the restaurant and their customers. Depending on the size, type, and location of the restaurant the
responsibilities of the restaurant manager will be different (Giannotti, 2021).
