Summary Mutarotation
Mutarotation is the process by which a sugar molecule changes its optical rotation due to the interconversion between its α and β anomers. Anomers are stereoisomers that differ only in the configuration at the anomeric carbon, which is the carbon attached to the oxygen in the ring structure.
