Composition and chemistry of carbohydrates :
Carbohydrates are the most abundant organic molecules in nature. They are
primarily composed of Elements carbon , hydrogen and oxygen. Carbohydrates may be
defined as polyhydroxy aldehyde or ketones. The term “sugar” is applied to
carbohydrates soluble in water and sweet in taste.
Biological significance of carbohydrates:
Carbohydrates participate in a wide range of functions .
1.They are the most abundant dietary source of energy (4 cal/g ) for all organisms.
2.Certain carbohydrates are the starting materials for the synthesis of fatty acids and
amino acids .
3. Carbohydrates also serve as the storage form the energy (glycogen) to meet the
immediate energy demands by the body.
