the recipes represent? How? Why do so many Chinese restaurants in the United States
cook Cantonese style (Guangdong)?
Chinese foods are identifiable with different regions in the country depending on the flavor
and ingredients availability. In the northern part of china meals with Peking duck, mu shu pork,
millet and soya beans are predominant. This is due to the cool climate that limits food produces.
As well, southern China uses flavors from Chiles and garlic while dairy products and seafood
mainly characterize their dishes. In the United States, most of the Chinese restaurants serve
Cantonese style meals, which is a popular meal back in china. 1 “The food is composed of stir-
fried dishes, seafood, delicate thickened sauces, and the use of vegetable oil instead of lard". The
availability of these ingredients in the US makes it a popular meal for Chinese living there.
